Mesophillic Starter Culture (62 DCU) $10.00: Add this culture to condition our milk for additional cultures and the addition of rennet. Mesophillic starter converts lactose into lactic acid. This package has plenty of culture to acidify 250 gallons of milk!
Penicillium Candidum (3 DCU)$10.00: This is one of the cultures that you use to make white-mold ripened cheese (e.g. brie and camembert) . Use in conjunction with Geotrichum Candidum. With this package you get .87 grams of culture, good for making 500 pounds of cheese.
Geotrichum Candidum (2 DCU) $10.00: Use this culture with Penicillium Candidum to craft your white-mold ripened cheeses such as camembert. This package contains 1.57 grams of culture, which can make up to 500 pounds of cheese.
Penicillium Roqueforti (1 DCU) $10.00: The blue mold! This is what gives blue-type cheeses their classic tang and taste. Package includes .56 grams of culture, this is enough to inoculate 250 gallons of milk, or almost 500 pounds of cheese!
